The green tomato, also called husk tomato or tomatillo, is a much smaller fruit than the tomato sold in Europe. The very tasty, green-coloured fruit is covered by a papery skin that breaks when the contents ripen. It has a sweet and slightly acidic flavour at the same time, and is a basic ingredient in many traditional Mexican recipes.

Green tomatoes are rich in vitamins, antioxidants and minerals such as phosphorus, iron and calcium. In traditional medicine, their peel is used as an infusion to lower blood sugar and relieve digestive problems.
