Asparagus is a perennial herbaceous plant with very branched, feathery foliage. This plant is made up of branched aerial stems and an underground part made up of roots and buds, which is commonly called “claw”. The vegetables known as asparagus are obtained from the young shoots.

Asparagus is low in calories and is a good source of vitamin C. It also has a moderate amount of provitamin A carotenoids, vitamin E and vitamin B.
