Couscous is a traditional dish made from durum wheat semolina, which after cooking has an average size of just one millimetre in diameter. It is traditionally made from semolina, which is the hard part of the wheat, ground but not turned into flour.

These ground grains are cooked, during which process they tend to swell until they increase in size and acquire their characteristic shape and appearance.
