Chard is a green leafy vegetable found mainly in the Mediterranean. It is mainly characterized by being rich in insoluble fibers, which help regulate intestinal function and maintain the health of the digestive system, avoiding problems such as constipation.

Chard is characterized by its large bright green leaves and marked nerves, the stems or stalks can be white, yellow or red, depending on the variety of chard in question, the best known are:

• Lyon yellow. Large, wavy, very light yellow-green leaves. Very pure white stalk, with a width of up to 10 cm.
• Green with white penca Bressane. Very wavy, dark green leaves. White, wide stalks up to 15 cm.
• Other varieties: Verde penca blanca, R. Niza, Paros, Green and Fordook Giant.

These vegetables are very rich in fiber, contain vitamins A, B1, B3, B5, B6, B9, C, as well as vitamin E and K. They are also rich in minerals such as calcium, sodium, potassium, and contain copper, iron and phosphorus.
